Chocolate Almond Bark with Salted Caramel & Blueberry Almonds and a hint of sea salt! Perfect for snacking or gifting!

If you have been following me for a while, you would know that I am a big chocoholic. I think I am slightly obsessed with it and this has been the case ever since I was a little kid. Back then we didn’t use to get too many different varieties of chocolates in India so every year I would look forward to my aunt’s visit to India (she used to live in Dubai) so that I could stuff my mouth with fancy chocolates. Anyway fancy or not, chocolates are always more than welcome in my life and mouth.
I think my addiction to chocolates comes from my dad! I kid you not, he is one of the biggest chocolate fans around. And he gets more excited on seeing chocolates than an average child would. So it’s in my genes and I am afraid this obsession is here to stay for a lifetime. And you guys also know my obsession with salted caramel and I have quite a few recipes using the salted caramel sauce on the blog [I really can can drink that stuff with a straw!] and so imagine my excitement when folks at Blue Diamond send me a pack of salted caramel almonds to try! What!!?? Salted Caramel Almonds? That was my first reaction on seeing the pack and oh god you guys, you need to try these almonds. They actually taste like salted caramel sauce. I think I don’t need another snack in my life because almonds are my favorite thing to snack on and when you combine it with salted caramel it really becomes divine!
And that’s not all, I was also given a pack of blueberry almonds to try. I seriously can’t get enough of these wonderfully flavored almonds. While I love snacking on them as such, I thought it would be a great idea to add some chocolate to them because let’s face it chocolate + anything = perfection <3 And so I made these chocolate almond bark. You all know barks are one of the simplest things to make and also one of the best homemade gifts you can give to your family and friends.
Chocolate Almond Barks are very popular and more often than not recipes call for roasting the almond and mix in other things but not anymore because these salted caramel and blueberry almonds are so flavorful that you simply don’t need to do anything. Just melt some chocolate and top it with salted caramel and blueberry almonds and voila you have a pretty perfect chocolate almond bark ready in no time.
For these chocolate almond bark, I used 3 types of chocolate – bittersweet, semi-sweet and white. You can use any chocolate of your choice, if you love dark chocolate use the bittersweet chocolate only. I personally like using all the three. And don’t forget to add some sea salt on top, it adds so much flavor! Yum!
Method
* Line a baking sheet with parchment paper or silicone mat and set aside.
Chop all the chocolate and add it to a large bowl. Place the bowl on top of a pan with simmering water. The water shouldn’t be boiling and the bowl should not touch the water.
Keep stirring as the chocolate will start to melt.
Whisk till all the chocolate is completely melted and smooth.
Pour the melted chocolate on top of the prepared baking sheet. Use a spatula to spread the chocolate on the pan.
Once the chocolate is spread uniformly, top it with salted caramel and blueberry diamonds immediately. Sprinkle sea salt on top.
Place the tray in the refrigerator for around 40 minutes for the bark to harden.
Once the chocolate almond bark is completely set, break it into pieces using a knife or your hands.
* I used ghirardelli chocolate in this recipe, you can use any chocolate of your choice.
* I kept the bark thin since I like it this way, if you like thicker barks don’t spread the chocolate too thin and use a smaller pan like a 9 x 13 baking pan.

- 8 oz bitter-sweet chocolate
- 4 oz semi-sweet chocolate
- 4 oz white chocolate
- ⅓ cup almonds [I used blue salted caramel blue diamond almonds]
- ⅓ cup almonds [I used blue blueberry blue diamond almonds]
- sea salt to sprinkle
Instructions
