Pumpkin Spice Brownies frosted with Pumpkin Spice Peanut Butter frosting!

Rich, dark chocolate Pumpkin Spice Brownies are the perfect fall treat. They are topped with a creamy pumpkin spice peanut butter frosting! If you love chocolate, peanut butter and pumpkin then this is the perfect dessert for you!
Time is flying, it really is. I remember when mom and dad (my in-laws) booked their tickets to visit us. It was in the beginning of this year, I remember saying oh that’s so far and they are here now. Wow I don’t even know where all these months in between went by. But the good news is that are here for next 3 weeks, yay! Family time is always the best and I am so glad this year both our parents visited us.
What did you guys do this weekend? We went to a state fair and it was really fun. I tried deep-fried Oreos for the first time! I have to confess as gross as it sounds, it wasn’t that bad. I mean I always thought it would be awful but it wasn’t. Of course it’s not something that I would like to eat everyday but it was fun to try it! Other than that I also baked some pumpkin spice brownies and frosted them with this amazing Pumpkin Spice Peanut Butter frosting!
You guys know how much I love pumpkin and peanut butter and so imagine my excitement when I received this cute #PSiloveyou box from folks at Peanut Butter & Co. featuring their new Pumpkin Spice Peanut Butter! These guys took their delicious peanut butter and blended it with real pumpkin and warm pumpkin pie spices like cinnamon and nutmeg to create their first ever limited edition peanut butter. Sounds yum? It sure is!
Brownies are one of the easiest things to make. You don’t even need a mixer to make these, at least I never use. One bowl and a wire whisk, that’s all you need to make these delicious brownies! Don’t you love such easy recipes? I sure do! I used Hershey’s special dark cocoa powder in this recipe and that’s why my brownies look so dark in color. I love love dark chocolate but if you don’t use regular cocoa powder in place. It would work just as well.
I did not use a lot of sugar in the frosting because a) brownies are sweet and b) the peanut butter has some sweetness as well but like always feel free to adjust to taste.

Method
*Preheat oven to 350 F degrees. Line a 8×8 inch square pan with aluminium foil with overhanging edges. Spray it with a nonstick spray and set aside.
Melt butter in a pan on stove top or using the microwave. Once the butter is melted, transfer it to a bowl and let it cool down for 5 minutes.
Add sugar and vanilla extract to the melted butter and mix till well combined.
Now add eggs, egg yolk, one at a time mixing after each addition.
Add in the all purpose flour, pumpkin pie spice and cocoa powder.
Mix till everything is well combined and you have a smooth batter.
Pour the remaining brownie batter in the prepared pan. Bake at 350 F degrees for 25-30 minutes or till a toothpick inserted in the center comes out clean.
While the brownies are in the oven, make the frosting by beating together cream cheese and butter till smooth.
Add powdered sugar and pumpkin spice peanut butter, cinnamon powder and mix.
Add milk and beat the frosting till it’s smooth and creamy.
Let the pumpkin spice brownies cool completely, cut into squares, top with pumpkin spice peanut butter frosting & enjoy!

- 10 tablespoons unsalted butter melted
- 1 teaspoon vanilla extract
- 1 cup granulated white sugar
- ½ cup all purpose flour
- 2/3 cup Hershey's special dark cocoa powder
- 1 teaspoon pumpkin spice powder
- 2 large eggs

Pumpkin Peanut Butter Frosting
- 4 tablespoons salted butter at room temperature
- 6 oz cream cheese at room temperature
- ½ cup + ⅛ cup powdered sugar
- ½ teaspoon cinnamon powder optional
- 4 tablespoons pumpkin spice peanut butter
- 1-2 teaspoons milk or heavy cream

Favorite pumpkin dessert…I don’t have one, I’m more of a savory-food kind of girl, but I will never turn down a bowl of spicy pumpkin soup with butter and roasted pumpkin seeds on top. Mmm! But if I absolutely had to choose, I’d go for a slice of pumpkin pie with cinnamon whipped cream.
