Tomato Avocado Cucumber Salad with Feta

Quite a long recipe name, isn’t it? I wanted to cut it short but then every ingredient seemed important and so I ended up including all of them in the recipe title! My parents went back to India yesterday and as you can imagine, I am extremely sad. It’s just that the house feels so empty when they leave. My heart is extra heavy today. Anyway I know I will be fine in a day or two as I get busy with work. I am looking forward to spending more time in the kitchen. I was always in the kitchen when my parents were here but it was hardly anything for the blog. My parents eat very simple Indian food everyday and I so I was cooking that most of the time. It was hardly anything blog worthy but now I can’t wait to get back to my blog cooking!

I made this tomato avocado cucumber salad a while back. It’s so perfect for summer and really easy to make. The strawberries and feta cheese add such a nice touch.

Tomato Avocado Cucumber Salad Recipe

I love all the summer produce, it’s hard to pick a favorite. So I tried including all my favorites in this salad like cucumber, avocado, tomatoes and strawberries. They are all in season and they all go perfectly well in this salad. Adding feta cheese is optional but I highly recommend it. Do you guys like it? love it? For me, it wasn’t love at first! I had never tasted this cheese back home and got introduced to it here in the US. I didn’t like it at first but slowly I started enjoying it. And it has do with the fact that I adore Mediterranean food and if you love Mediterranean food then you obviously need to love feta cheese!

Anyway to make this salad, all you need to do is toss everything together and eat. Yup you only 10 minutes to make this. I recommend serving this salad as soon as you make it. If you want to make it in few hours in advance, at least do not add salt and feta cheese till you are ready to serve. Enjoy this fresh tomato avocado cucumber salad this summer!

Tomato Avocado Cucumber Salad with Feta & Strawberries

Summer salad with fresh tomato, avocado, cucumber and strawberries!

Ingredients 

  • 1 avocado diced
  • 1 cup grape tomatoes
  • 1/2 English cucumber diced
  • 7-8 large strawberries sliced
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • salt to taste
  • pepper to taste

Instructions 

  • To a large bowl, add diced tomatoes, cucumber and avocado. Also add the strawberries.
  • Mix lemon juice, olive oil, salt and pepper in a bowl and drizzle on top of the salad.
  • Toss everything together. Add feta cheese and toss once more.
  • Serve immediately.
