Brown butter crepes filled with Apple Cinnamon and Cinnamon Whipped Cream. Served with caramel sauce on top, these apple cinnamon crepes are like fall in every bite!

Apple Cinnamon Crepes

So the days are getting colder and day light is getting shorter by the day. In fact yesterday I got up at 5:30 am and it was really dark outside. Just few months back when my parents were here, my dad used to go for his morning walk at the same time and it used to be nice and bright. Oh well, it’s going to get worse and as a food blogger I really dread the grey skies and lack of sun. Anyway to deviate my mind off the grey skies, I made these Apple Cinnamon Crepes for our weekend brunch this week. Aren’t they gorgeous?

I have to confess though that I first thought of naming this recipe “Brown Butter Apple Cinnamon Crepes” because I browned the butter before adding to the recipe. But after making the dish and eating it, I realized that the flavor of brown butter wasn’t really prominent. Apple and cinnamon was over-powering. So I am just calling these apple cinnamon crepes and you can very well use normal butter and skip the browning part. Brown butter definitely adds to the flavor but you can very well do without it in this recipe since it’s more about apples and cinnamon : )

Apple Crepes

Apples and cinnamon are meant for each other, that’s like a given fact and they taste oh-so-amazing in these crepes. Have you made crepes before? They are really super simply to make, you don’t need a special crepe pan or spreader to make these. My favorite part about making crepes is that the batter is made in a blender. It can’t get more simple! You just need to put everything together in a blender and mix! So Easy.

To make the crepes, simply pour batter on a non-stick pan and swirl it around and then cook for few seconds on each side. And that’s it your crepes are ready to be filled with anything you fancy –  jam, nutella, whipped cream, the options are endless. And for this recipe I filled them with cinnamon apples, which makes it the perfect fall breakfast!

This recipe basically has 3 parts to it

1. The Crepe Batter

2. Apple Cinnamon Filling

3. Cinnamon Whipped Cream

Apple Cinnamon Crepes Recipe

I suggest making the crepe batter first and then let it rest for 30-60 minutes. During that time you can prepare the filling and the whipped cream. With a little planning, this breakfast is easy to assemble. In fact you can even make the crepe batter a night before. Referigerate overnight and when next morning when you want to make crepes, simply take out the batter and let it come down to room temperature and make crepes.

Even though I love everything about these crepes, my most favorite part is the cinnamon whipped cream. That is so GOOD! I am seriously dreaming of putting it over my hot chocolate, that would be so awesome. It was so good that I didn’t only put it inside the crepes but also on top of it and I definitely recommend that you do the same!

Apple Crepes Recipe

I insist that you guys give these apple cinnamon crepes a try. This might just be your new favorite fall breakfast!

 

Method

In a small pan on medium heat, melt 3 tablespoons of butter.

The butter will melt, then bubble up and them calm down.

It will turn brown in color in 5-6 minutes and you will have a nutty aroma by then. Be very careful here because it can also burn and you don’t want that. As soon as it turns brown, remove butter from heat and you can place the pan on top of some ice cubes to stop the cooking process. Let the butter cool down.

To a blender add – milk, water, eggs, vanilla extract, cinnamon powder, melted brown butter.

Now add flour, salt and sugar.

Blend till everything is well combined and you get a smooth batter. Transfer to a bowl, cover and refrigerate for 30 minutes.

In the meanwhile prepare the apple cinnamon filling. Melt some butter in a pan. Add chopped apples, brown sugar, cinnamon powder, nutmeg powder and water.

Cook the mixture for few minutes till the apples get soft yet maintain their shape. Remove from heat and set aside.

Heat a non-stick pan on medium heat. Spray it with a non-stick spray. Pour around 1/3 cup batter in the center of the pan and immediately swirl the pan around to spread the batter evenly.

Cook for a minute or so and flip the crepe once you see bubbles on top. Cook the other side for another minute or so and remove from pan.

Repeat the process of making crepes till the batter is finished. Make cinnamon whipped cream (sorry no step by step picture for that!) by beating heavy cream till it forms soft peaks. Add sugar, cinnamon powder and vanilla extract and beat again till the cream form stiff peaks. Set aside.

To assemble the apple cinnamon crepes, place the apple-cinnamon filling and the cinnamon whipped cream on one side of the crepe.

Roll the crepe, drizzle some caramel sauce on top and serve immediately.

* You can adjust the amount of cinnamon powder in the apple cinnamon filling to preference and taste. If you want more pronounced cinnamon flavor, add 1/4-1/2 teaspoon more of it in the filling.

* The batter for the crepe can be made in advance. Refrigerate overnight and prepare the crepes in the morning!

Ingredients 

crepe batter

  • 1 cup flour [i used whole wheat flour which i use to make roti you can use regular flour]
  • 1 cup milk
  • 1/2 cup + ⅛ cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon powder
  • 2 eggs large
  • 1 tablespoon granulated white sugar
  • teaspoon salt
  • 3 tablespoons unsalted butter

Apple Cinnamon Filling

  • 4-5 apples cut into cubes
  • 1 teaspoon cinnamon powder
  • ¼ teaspoon nutmeg powder
  • 2 tablespoons brown sugar
  • 2 teaspoons water
  • 1 tablespoon butter [i used salted you can use unsalted butter as well]

Cinnamon Whipped Cream

  • 1 cup heavy cream
  • 2 tablespoons granulated white sugar
  • 1/2-3/4 teaspoon cinnamon powder depending on how much you love cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  • Place the bowl and the whisk attachment in the refrigerator for 15-20 minutes before you whip the cream.
  • Beat heavy cream with the wire whisk attachment of your stand mixer or using your hand mixer till it forms soft peaks.
  • Add sugar, cinnamon powder and vanilla extract and beat again till the cream form stiff peaks. Set aside.
  • To assemble the crepes, place the apple-cinnamon filling and the cinnamon whipped cream on one side of the crepe.

  • Roll the crepe, drizzle some caramel sauce on top and serve immediately with some more cinnamon whipped cream on the side!

  1. Our family Sunday morning go to was always crepes like these. Our filling is peaches and apples, peaches fresh when in season but canned is great too. Always fresh apples of course.
