Belgian Waffles with Triple Berry Sauce

My obsession with kitchen gadgets is borderline dangerous. I don’t know if it’s because I am food blogger or because I just want to get everything in my kitchen, whatever it is the fact is that my kitchen and pantry are overflowing with them. I get stuff, put them in the pantry and don’t even open them for like months! It’s not that I don’t want to but it’s just that I have so many of them, that I forget the ones that are not in front of my eyes. For example, I got this waffle maker in the beginning of this year. Being a food blogger, I obviously wanted a waffle maker however once I bought it, I just kept it in my pantry and forgot all about it.
This year has been a bit busy and tough due to some personal reasons so that’s there too but honestly it just slipped out of my mind. Around 2 weeks back, I noticed this waffle maker tucked in one of the corners in my pantry. And it was then that I realized that I need to use it and so I ended up making these Belgian Waffles. And since it’s berry season, I had to top them with a berry sauce. I got lot of berries from my local farmer’s market, they were super ripe and really great in this berry sauce.
I researched a bit for belgian waffle recipes and most of them called for separating the eggs. Now there was this recipe which came with my waffle maker, it sounded super simple and so I adapted my recipe from it. I have to say the results were really good. The recipe is straight forward, no complex steps and waffles are crisp from outside and tender from inside. These homemade belgian waffles are perfect for weekend brunch or just about any day when you feel like eating something fancy. Hope you guys like it!
Method
First make the triple berry sauce. Begin by heating berries with 1 tablespoon water and granulated white sugar in a pan on medium heat. Stir till the sugar melts and dissolves completely, around 2-3 minutes.
In a bowl, mix together fresh lemon juice and cornstarch. Add the cornstarch liquid to the berry sauce and cook for another 3-4 minutes or till the sauce thickens. Remove from heat and set aside until ready to use.
In a bowl whisk together flour, sugar, baking powder and salt. Set aside.
In another whisk together eggs, vanilla extract, butter and milk. Meanwhile pre-heat oven to 200 F degrees.
Stir wet ingredients into dry ingredients. Mix till just combined.
Pour 3/4 – 1 cup batter per waffle and cook till golden brown [according to instructions on your waffle maker, around 4-5 minutes].
Place the prepared waffle in 200 F degree pre-heated oven to crisp up while you make the other waffles. Repeat till the batter is finished, I got 4 waffles out of this batter. Place all waffles in a single layer to crisp up in the oven before serving. Top the belgian waffles with triple berry sauce, sprinkle with powdered sugar and enjoy.
* Adjust the sweetness of the berry sauce to taste. The berries I used were really sweet so 1/3 cup of sugar was good enough. If the berries you are using are not sweet enough, you may add up to 1/2 cup of sugar.

- 2 cups mixed berries I used raspberries blackberries and blueberries
- 1 tablespoon water
- 1/3 cup granulate white sugar
- 1 tablespoons lemon juice
- 3/4 tablespoon cornstarch

- maple syrup
- fresh berries
- butter
