Isn’t it amazing how the weather changes as soon as fall officially begins. This year we had a really hot summer here in Seattle, I mean I have lived here for 4 years now but this was definitely the hottest summer. At one point I really felt as if I was in Delhi and I told my husband that we need an air-conditioner. I never really thought that we would need an AC in Seattle but anyway that period was short lived. It was “THAT” hot for only about 10 days and then it was back to being pleasant. Now that fall is here, days are of course cooler. The good thing though is that we are still getting plenty of sunshine. I am keeping my fingers crossed that it stays this way. I love when it’s cold but the sun is still out. I get really depressed if I don’t see the sun for days and that has happened before. I am hoping for a good winter!
But irrespective of how the weather outside is, one thing which always cheers me up is Peanut Butter.
It’s amazing how much I love it. I add it to everything and then ask my husband “it tastes amazing, isn’t it”!! He likes peanut butter but doesn’t share the same love and excitement [in short he isn’t obsessed like me] so he always responds back saying “yeah it’s good but not as good as you are making it out to be”! What?? I don’t think he gets how amazing peanut butter is! One of my favorite things to add peanut butter to is my oatmeal.
I think they are amazing together and folks at Peanut Butter & Co seem to share my sentiment. Peanut Butter & Co has partnered with Bob’s Red Mill to create #Oatober. Basically it means that all month they will be sharing recipes using oats and peanut butter! YUM. I loved the combination of peanut butter and coconut the last time I tried it in a recipe and I thought adding oats will only enhance the flavor and I was so right. These Coconut Peanut Butter Oatmeal Bars turned out delicious!
For #Oatober I made these coconut peanut butter oatmeal bars using Peanut Butter & Co Raisin Cinnamon Swirl and Bob’s Red Mill Old Fashioned Oats. I added some toasted coconut in the batter and sprinkled some on top. The toasted coconut gave these bars a crunchy texture which I personally loved. These bars are such a great treat to be enjoyed with a glass of cold milk. I also drizzled the bars with some chocolate because you know I can’t help it but that’s totally optional.

Method
Preheat oven to 375 F degrees. Place 1 cup of shredded coconut on a baking mat.
Toast the coconut, stirring often till it turns light golden brown in color. This will take around 8-10 minutes. Set aside.
In a bowl, mix together flour, salt and brown sugar.
Cut cold butter into cubes and add to the flour.
Mix the butter into the flour till it resembles coarse crumbs. You can do this using a party cutter or a fork. Then add toasted coconut and mix.
Also add rolled oats and mix to form a dough.
Reserve 3/4 cup of dough and spread the remaining in a 8 x 8 inch square pan lined with parchment paper. Press the dough firmly in the pan. Pour 1/2 cup of Cinnamon Swirl Peanut Butter over the dough. I microwave the peanut butter for 30-40 seconds, so that it’s easier to spread.
Now sprinkle the remaining 3/4 cup of dough all over the pan.
And finally also sprinkle 1/4 cup shredded coconut (un-toasted).
Bake at 375 for 20-25 minutes. Remove from oven and let the bars cool completely before cutting them into squares. Drizzle melted chocolate on top (optional) and enjoy these peanut butter oatmeal bars with a glass of milk!
* Do not cut the bars till they have completely cooled down.

Ingredients
- 1.25 cups sweetened shredded coconut divided
- 1.25 cups all purpose flour
- ½ teaspoon salt
- ½ cup + 2 tablespoons brown sugar

- 1 cup oats [I used Bob's Red Mill Old Fashioned Rolled Oats]
