Whether it’s your favorite Indian takeout or the regular lentils and beans, the book shows you how easy it is to cook your favorite Indian meal in the Instant Pot.
Each recipe has full color photo and clear step-by-step instructions. There are also tips to make most recipes vegan (if they aren’t to begin with!). Sometimes a substitute is as easy as replacing ghee with oil.

I think my favorite overall was the Masala Mac N cheese! It was a huge hit with my father and brother in law and my husband. It didn’t even last one day!! I even made a double batch of it. I’ve made many things, like the chutneys and palak paneer.
I can’t wait to cook more from it 🙂

Masala Baingan was the first thing I made from the book. It’s still my favourite but I’ve loved all the other recipes too?
My favorite is your instant pot Ethiopian lentil. I was looking for a shortcut to enjoy my Ethiopian dishes and tried your recipe. It tastes just like the one we’re used to back home.
Yours is the best Indian Cookbook for the InstantPot! I cook from it at least once a week and your butter chicken is hands down THE best one I have ever made! I get requests for it all the time. Cheers for your 1 years anniversary and here is hoping for more from your kitchen!

Thai peanut noodles. It is awesome. I can make the sauce ahead and the sauce is so versatile that it can be made with noodles or rice.

If I had to choose, one of my favorites is definitely the vegan makhani sauce!!! I love the sauce in general and love being able to add whatever veggies you want to it. Delish!
