This week has been really hot here, no I am not complaining about it, in fact I am glad it happened!
Past few weeks were rather not as hot as they should have been in July but now it finally feels like summer – my fan and air-conditioner is on, I am wearing shorts and flip flops and making this homemade cucumber lemonade!
In short, making the most of summer while it lasts. I like making lemonade at home for various reasons. First and most important for me is that I can sweeten it to my liking.
Most of the lemonades sold in the stores are just too sweet for my taste. So I almost never buy them. With the homemade version, I have the option to control what goes in it.
Second, the flavor options are endless when you make lemonade at home. You can use fruits like mangoes, blueberries, peach, raspberries or even cucumber like I used in my Cucumber Lemonade Recipe.
My idea to make a refreshing drink with cucumber has been going in my head for a bit now. I love a non-alcoholic cucumber drink at one of the local restaurants here and so I have been meaning to make one at home too.
I thought of making a mocktail first but then settled on lemonade. You can however add sparkling water in place of water in this recipe and make a fizzy mocktail!
This recipe for this cucumber lemonade is pretty straight forward. When it comes to homemade lemonades, the sweetness and tang can be adjusted to taste. If you prefer a sweeter lemonade, add more sugar. If you like it less tart/sour, add less of lemon juice.
That’s the best part about making lemonade at home, isn’t it? So easily customizable!
This Cucumber Lemonade Recipe

For this recipe, I often use a mix of lemon and lime juice. I love the mix flavors of both in a lemonade. Of course you can only stick with the lemons, but if you want to change things up a bit, replace 2-3 lemons with lime.
I have used persian cucumber in this recipe, they are sweeter and seedless and work well for this recipe. You may well use English cucumber here.
With the weather heating up, I know I will be making tons of this cucumber lemonade. I usually make a batch and keep it refrigerated. It lasts for few days and is a great drink to sip on while I am working.
I have also used mint leaves in this recipe, I just add them to the lemonade mixture while heating it up but it’s optional and you may skip if you like. I like the mint flavor in my lemonades.
For the best flavors, it is important for the mixture to sit in for a while. This Cucumber Lemonade tastes best after few hours, once it is chilled and flavors are well mixed with each other.

Method
1- Chop the cucumber and place in a blender. I have used Persian cucumber in this recipe.
2- Puree the cucumber to a fine paste. Don’t add any water here.
3- Transfer the cucumber puree to a pan/pot on medium heat. Add sugar to it and stir.
4- Also add the lemon juice and mix. I often use a mix of lemon and lime juice and it works very well.
5- Stir in the mint leaves and let the mixture simmer of medium heat for 6-7 minutes until the sugar dissolves completely.
6- Remove pan from heat, cover and let it sit for 30-45 minutes for the flavors to mingle together. You can also refrigerate the mixture at this point.
After 45 minutes, strain the liquid using a strainer.
7- Then add 5 cups of cold water to it.
8- Cover and refrigerate until chilled.
To serve, add ice cubes and slices of lemon and cucumber to a glass. Pour the cucumber lemonade into the glass, garnish with mint leaves and serve.

Cucumber Lemonade
Ingredients
- 1 pound persian cucumber
- 2/3 cup + 2 tablespoons granulated white sugar adjust to taste, add more for a sweeter lemonade
- 1 cup lemon juice from 7-8 lemons, can also use a mix of lemon and lime juice
- 10-12 mint leaves optional
- 5 cups cold water

Cucumber lemonade is classic for summer! However, I prefer making this as cocktail styles, like adding a little bit volka and a little bit soda. They easily change into Mojito. Anyways, cheers! xD
