This Cucumber Mocktail is seriously refreshing for hot summer days. Made with fresh cucumber juice, coconut water and garnished with fresh mint leaves, this is the drink that you will love to serve your guests at summer and pool parties!

Creating delicious mocktails is something that I enjoy a lot. I feel like everyone should have an option to have fancy drinks, irrespective on their drinking preference. Mocktails are always on my menu whenever we host during Diwali or the holidays like this spicy mango mocktail and cranberry maple rosemary mocktail. They are also always on my menu for summer parties and get-togethers. There can’t be anything better than a refreshing mocktail when the sun is shining bright, isn’t it?

This Cucumber Mocktail is exactly the drink you need when the days get hotter. Cucumber is a favorite during summers. It’s light, fresh and I love using it in drinks like cucumber lemonade and also in salads. This mocktail is easy to make, so refreshing and you won’t be able to get enough of it.

Ingredients

Cucumber: for this recipe, I used 1 English cucumber, which was rinsed and then peeled and then pureed. You can also Persian cucumber for this recipe but you would need to use more of them as they are smaller in size.

Coconut water: use good quality coconut water, fresh is always the best but if you can’t find fresh, use best tasting packaged coconut water. If you are in the US, I love Trader Joe’s coconut water.

Mint & lime: the fresh mint leaves and lime make the drink fresh!

and there’s some soda water for the fizz. Because mocktails taste so much better when they are fizzy.

Step by Step Instructions – How to Make Cucumber Mocktail

1- Wash and peel the cucumber. I used one English cucumber which after peeling weighed around 206 grams. Cut the cucumber into a few large pieces and then transfer it to a blender and puree it.

2- Transfer this cucumber puree to a pan and put the pan on medium heat. Add 1 to 2 tablespoons sugar (as sugar as needed, I added 2 tablespoons but you can add 1 to keep it less sweet) and also add juice of 1 small lime. Stir and let it all mix together. Then remove the pan from heat.

3- Using a strainer, strain this mixture into another container. This will give you a smooth cucumber juice. Set this aside.

4- To make the drinks, we will first garnish the serving glasses. Take some hot honey on one plate and sea salt flakes on the other. Take your serving glass and dip the rim of the glass into the hot honey on the plate. Rotate the glass so that all the rim gets coated with the honey. Then dip the rim into the sea salt flakes and rotate. The salt flakes will stick to the honey and you will have a nice rim around.

5- Now, add a lime wedge and 3 to 4 mint leaves into the glass. Using a muddler, press the lime wedge and mint leaves to extract their juices. Then fill the glass with some ice cubes.

6- Add 3 oz of the prepared cucumber juice, followed by 2 oz of coconut water.

7- Top with soda sparkling water/soda water. The amount would depend on how big or small your serving glasses are. I added around 3 oz of soda water.

8- Stir everything using a mixing spoon. Top with more mint leaves and serve the cucumber mocktail immediately!

Tips & Notes

  • The amount of servings this recipe will make depends on the size of the serving glass you will use. I used pretty big glasses and so it only made 2 drinks.
  • If you are using smaller glasses, reduce the amount of cucumber juice and coconut water as well but keep the ratio similar. So for a smaller drink, you can do 1 & 1/2 oz of cucumber juice and 1 oz of coconut water and then top it with soda water.
  • Adjust the amount of sugar to taste. You can make it without sugar as well.
  • If you don’t have a muddler, you can use a wooden spoon.
  • If you don’t have hot honey, you can do plain honey. You can find hot honey (which is nothing but honey mixed with chili peppers) at grocery stores or you can make it at home.

Ingredients 

  • 1 large cucumber I used English cucumber, 206 grams
  • 1 small lime juice of + more lime wedges to serve
  • 1-2 tablespoons granulated white sugar or to taste
  • 4-5 oz coconut water 120-180 ml
  • soda water around 2-3 oz per serving (depending on size of glass)
  • handful mint leaves
  • hot honey and sea salt flakes for coating the glasses

Instructions 

  • Peel the cucumber and then cut into big chunks. Transfer to a blender to make a puree. Transfer the puree to a pan and add squeeze in juice of 1 small lime and sugar to taste. Stir until the sugar dissolves and everything mixes in together and then remove pan from heat.
  • Strain the mixture into another container using a strainer.
  • Take your serving glass and apply some spicy honey on the rim and then roll the rim in sea salt flakes so that it gets coated with the salt.
  • Add a lime wedge and a few mint leaves into the glass. Use a muddler to release the juices from the lime and mint leaves. Top with ice cubes.
  • Add 3 oz of the prepared cucumber juice, followed by 2 oz of coconut water. Top with soda sparkling water/soda water. The amount would depend on how big or small your serving glasses are. I added around 3 oz of soda water.
    Stir everything using a mixing spoon. Top with more mint leaves and serve immediately!
