Healthy to snack on, this Granola Snack Mix is just what you need during the football season and holiday gatherings!
I am taking a little break from Holiday recipes and squeezing in a healthy snack idea for you guys! ‘Tis the seaosn for all sinful desserts but let’s not forget that amidst all the madness, we need something healthy to snack on. I am someone who always needs something to snack on, like always and more so if watching a game or a movie. I think snacking and game day go hand-in-hand. For me anyway, watching football or any other game is no fun until and unless I have something to snack on.
What’s the most common thing you snack on while watching football? Let me guess, potato chips. No seriously that’s what I do most of the time so I am considering it’s the same for you. But I have been trying to snack healthy. And honestly we all need to snack healthy especially during holidays. And this Granola Snack Mix is just what you need to balance out the desserts!
You guys know I love making homemade granola. It is so easy, tastes amazing and so I make it very often. However this time around I wanted to make a granola snack mix which everyone can snack on, not only while watching football but also during holiday gatherings. Plain granola could get boring and so to make it festive and also more delicious I added raisins, dried cranberries, white chocolate chips and Blue Diamond Wasabi & Soy Sauce Almonds. The addition of these almonds made the flavors more bold and pronounced.
Since I was making this granola mix for snacking, I wanted to have clusters in it and so I did not stir the granola while it was baking. Just let it bake till it’s done and don’t stir it in between. Once the granola is baked and has cooled down, break it into clusters and add in the other mix-ins. This granola snack mix is little sweet, little salty and definitely a crowd pleaser.
Method
In a bowl toss together oats, salt and cinnamon powder. Set aside.
In a pan on medium heat, mix together honey, vanilla extract and coconut oil. Heat till the mixture is slightly warm.
Remove from heat and pour the mixture into the bowl of oats. Mix well till the oats are well moistened.
Spread the moistened oats on to a baking tray. Spread in a single layer.
Bake at 325 F degrees for 25-30 minutes, without stirring. Remove from oven and let the granola cool down. Once it has cooled down, break it into clusters with your hand.
Add Blue Diamond Wasabi & Soy Sauce Almonds, raisins, cranberries, white chocolate chips and mix till everything is well combined.
Store the granola snack mix in an airtight container and enjoy!

Wanted to do a granola snack mix and this sounded really good but I can’t get the oat mix off the baking pan. Seriously going to have to toss the pan. Where did I miss the part about spraying or lining with parchment paper?

I’m with you Manali. I love snacking. As a matter of fact, if I could forgo regular meals and just snack away to my hearts content.. .I would. These days my favorite snacks are parmesan crisps with a little sprinkling of red pepper flakes. I love the crunch these provide without all the carbs. But granola is another favorite snack of mine. I love to add a small handful to a bowl of Greek yogurt. . .for a brekky that will help carry me through the morning. How unique to include the wasabi and soy sauce almonds in the granola…I’ll have to give this a try.
