Grilled Cheese Paneer & Corn Sandwich

What is your favorite quick breakfast recipe? Mine are oats and sandwiches, both are filling and can be prepared rather quickly. I make a lot of sandwiches for breakfast, usually I just add some tomatoes, onions, avocados to my whole wheat bread and eat it and that hardly takes me 10 minutes. However there are days when I want to make a special sandwich like this Grilled Apple Peanut Butter Sandwich or this Veggie Grilled Cheese Sandwich and today’s recipe is an addition to that list.
This paneer (Indian cottage cheese) and sweet corn sandwich is delicious, so filling and doesn’t require much work. The only thing which you should already have in your refrigerator and ready to be used is grated paneer. I make my own paneer at home, it’s easy to make plus that way I get to eat organic paneer which I otherwise don’t find at Indian stores here. Like I mentioned earlier, this sandwich is so filling, I ate 1 for lunch and was not hungry till dinner time!

Method
Heat 3/4 tablespoon oil in a pan on medium heat. Once hot add finely chopped onion and garlic.
Cook for around 2 minutes till raw smell goes away.
Add grated paneer, corn, crushed kasuri methi [dried fenugreek leaves], red chilli powder, salt, pepper and give a good mix. Cook on medium heat for 2 minutes and then remove the pan from heat.
* I used frozen corn and put them in hot water for few minutes before adding to the pan.
In a small bowl, melt 1.5 tablespoons of butter. Add finely chopped coriander leaves to the butter and mix.
Take your bread slices and apply butter-coriander mixture on two of them. If remaining, you can apply on the other two slices as well.
Arrange the paneer-corn mixture over the buttered bread slices. The stuffing should be on the higher side so make a thick layer.
Place cheese slices over the paneer-corn mixture and close the sandwich with the other 2 slices of bread.
Melt butter on a grill pan on medium heat. Once hot place the sandwich on the grill pan.
Grill till sandwich is golden brown in color from both sides and has nice grill lines.
Cut the sandwich into any shape of your choice. I cut them into half, you can also cut diagonally. Serve with tomato ketchup!
* You can cut down or increase the quantity of butter to taste and preference. Although I would like to mention that butter helps in grilling the breads nicely. So if you want those crispy grilled sandwiches, use more butter.
* I used a grill pan for these sandwiches, you can grill them in a normal pan or use a sandwich maker.
* Use any bread of your choice, I used whole wheat.

Ingredients
- 1 cup paneer grated
- ½ cup sweet corn [i used frozen]
- 1 onion small or ¼th of a big onion
- 1 garlic clove big
- 1 teaspoon kasuri methi [dried fenugreek leaves] crushed
- ⅛ th teaspoon red chili powder or to taste
- ¾ tablespoon oil
- 2-3 tablespoons of butter salted
- 1 tablespoon coriander leaves chopped
- 4 bread slices of your choice
- 2 cheese slices of your choice
Instructions

- Cut the sandwich into shape of your choice and serve with tomato ketchup.
