Individual No Bake Tiramisu Cheesecake

Individual No Bake Tiramisu Cheesecake is an easy way to satisfy your Tiramisu craving!

It’s beginning to get hot here and I am loving it. Love the sun when it’s shining bright till 8 pm. It makes me feel like there are more than 24 hours in a day! And with so much going on in my life, I really need those extra hours. Days are flying with packing stuff and spending time with family but amidst all the craziness, I take out some time to make desserts. Life becomes boring if there isn’t some dessert involved on a regular basis. Isn’t it? No bake cheesecakes have been always been one of my favorite desserts because they are just so easy to make. And what makes them even better is that you can make then way ahead of time. It’s a win-win situation!
Tiramisu is one of my favorite desserts and so this time around I thought of giving it a twist and made these individual no bake tiramisu cheesecake. I did make few changes in this tiramisu cheesecake, depending on what ingredients were available in my pantry.
1. I have used cream cheese in this recipe. Mascarpone cheese is used in Tiramisu traditionally but it is not something that I always have in my refrigerator. But cream cheese is something I always have!
2. There’s no tiramisu without some alcohol in it but we are not too fond of alcoholic drinks and almost never have any in our home. That’s why I used imitation rum extract. I loved the taste!
3. The cookies, yes ladyfingers are used in tiramisu. I used nilla wafers here.
So in spite of these 3 changes, this no bake tiramisu cheesecake was just wonderful if I may say so. I really liked the fact that it tasted so much like regular Tiramisu in spite of me not using a lot of traditional ingredients in this recipe. Next time you plan an Italian dinner or crave for Tiramisu, make these individual no bake tiramisu cheesecake. It’s really super simple to make and tastes amazing. I highly recommend chilling it for 3-4 hours before serving, overnight works even better.
I used 2 big glasses here. This recipe will easily serve up to 6 if you use those mini dessert glasses.
Method
*Mix 2 teaspoons of coffee with 1/4 cup warm water. Set aside.
Crush the cookies (nilla wafers) using your food processor and transfer to a bowl.
Add melted butter and 3 teaspoons of the coffee mix that we prepared earlier to it.
Mix till everything is well combined and set aside.
Take room temperature cream cheese and granulated sugar in the steel bowl of your stand mixer.
Beat the two till mixture is smooth and creamy. Add imitation rum extract and 3 teaspoons of the coffee mix that we had prepared earlier.
Mix till well combined and chill the filling in the refrigerator.
Chill the bowl and the whisk attachment in the refrigerator for 20 minutes before you beat the cream. Then add chilled cream to it.
Beat the cream using the wire whisk attachment of your stand mixer or using your hand mixer till is forms peaks. Be careful not to over-beat.
Transfer the whipped cream to the bowl with the cream cheese filling.
Fold the whipped cream with the cream cheese mixture carefully till everything is well combined.
Take the serving glasses/cups, spoon 4 tablespoons of the cookie mixture at the bottom [or 2 tablespoons if using smaller cups].
Spoon/pipe the cheesecake mixture on top.
Dust your no bake tiramisu cheesecake with with cocoa powder and chill 3-4 hours before serving.
* Always chill the cheesecake for 3-4 hours before you serve it. Overnight is even better.
* You can use any cookie of your choice for the crust, just add some coffee mix to it and it should be fine.
Individual No-Bake Tiramisu Cheesecake
Ingredients
Coffee mix
- 2 teaspoons ground coffee powder
- ¼ cup warm water
Cheesecake Filling
- 8 oz cream cheese
- 1 cup heavy cream
- ½ cup granulated white sugar
- 3 teaspoons of the coffee mix
- ½ teaspoon imitation rum extract
Crust
- ¾ cup nilla wafer crumbs
- 1.5 tablespoon unsalted butter melted
- 3 teaspoons of the coffee mix
Unsweetened cocoa powder, to sprinkle
Instructions

- Using the paddle attachment of your stand mixer or using your hand mixer, beat together cream cheese and granulated sugar till smooth and creamy.
- Add imitation rum extract and 3 teaspoons of the coffee mix that we had prepared earlier.
- Mix till well combined and chill the filling in the refrigerator.
- Chill the bowl and the whisk attachment in the refrigerator for 20 minutes before you beat the cream. Then add chilled cream to it.
- Beat the cream using the wire whisk attachment of your stand mixer or using your hand mixer till is forms peaks. Be careful not to over-beat.
- Transfer the whipped cream to the bowl with the cream cheese filling.
- Fold the whipped cream with the cream cheese mixture carefully till everything is well combined.

Individual No Bake Tiramisu Cheesecake
I made this exactly as you said with the exception that I used dark rum instead of rum extract. It turned out great! My wife and son loved it. I think I will increase the nilla wafer crumbs by 50% next time so it has a thicker base.

I have made this recipe numerous times and everyone has loved it. It is a keeper. I have also drizzled

Very yummy. Was a great hit at my ladies dinner. The only thing I did different was instead of the cocoa powder on top, I did chocolate shavings.
Super success! This recipe is amazing!!! I added almond extract instead of rum, added some sour cream to the cream cheese mixture to make it taste closer to mascarpone and everything else exactly per the recipe. All my guests loved it.

Sorry for the confusion Dania..you first add the cookie mixture at the bottom and then top it with the cheesecake mixture..that’s it! hope that helps!

Came out great! I too always have cream cheese in my fridge and if you add a little sour cream with the cream cheese it tastes just like Mascarpone. I normally don’t like the flavor of rum or imitation rum so I usually use a little almond or amaretto in my tiramisu with a tad espresso and it takes like the real thing…would never know the difference….Thanks for the recipe.

Hi, I would like to make this recipe for a dinner party. I am not a big coffee drinker so I was wondering if you would be able to tell me what ground coffee you used for this recipe? Also, does it simply dissolve in the warm water to make the coffee?
