Temperatures have been soaring here in the pacific north-west. This weekend we went on a road trip to Canon Beach and Portland and god it was hot. Canon Beach was wonderful actually, the weather was lovely but Portland was burning.

I actually felt like I was walking in Delhi. And I don’t feel that very often here. I am looking forward to the cooler temperatures from mid-week.

Since it has been so hot, I have been making a lot of homemade frozen treats. But out of everything that I have made so far, this Tender Coconut Ice Cream has to be my favorite!

This recipe is inspired from the tender coconut ice cream from Natural.

Natural is a popular ice cream chain in India. I had there ice cream for the very first time while visiting my friend in Mumbai. There ice creams are made from real ingredients, aren’t too sweet and what I love most about them is that you can actually taste the flavor of the fruit.

I remember being blown away with the flavors on their ice creams. And I was so disappointed that we didn’t have Natural in Delhi. I have heard of stories people sneaking in ice creams in their baggage on their flight from Mumbai to Delhi. Yes, it’s quite a craze.

But after few years, much to my happiness Natural opened their outlets in Delhi. So since then, whenever I go back, I make sure to have the ice cream. I love all their fruit ice creams from mango to chikoo (sapota) to sitaphal (custard apple)!

One of their most popular ice creams is the tender coconut ice cream. It’s really one of its kind. There are no artificial flavors and you actually feel like eating a tender coconut while eating that ice cream.

I wanted to create the exact ice cream at home but without an ice cream maker and I am so glad that it turned out perfect!

Where do I find tender coconut?

This tender coconut ice cream recipe obviously calls for tender coconut. The dry brown coconut won’t do it for this recipe.

You should look for tender coconuts at Asian Stores like H Mart. I have also seen them at Whole Foods. The younger the coconut, the better it is for this ice cream.

You want the meat/flesh of the coconut to be really soft for this ice cream.

How to get real tender coconut flavor in the ice cream?

Simply by using real ingredients!

I have used tender coconut flesh here along with the fresh coconut water that I got from the coconut.

I also added some coconut milk to the ice cream base. You may skip it but I think it makes the ice cream creamier and also adds to the flavor.

To add to the texture, I also added some bits of chopped coconut to the ice cream at the end. Do not miss it!

This Natural style Tender Coconut Ice Cream

✓ is made without any ice cream maker

✓ literally takes 10-15 minutes to make the ice cream base and freeze it

✓ freezes beautifully without an ice cream maker

✓ tastes exactly like the tender coconut ice cream from Natural

✓ tastes like just eating a real tender coconut!

I also ended up adding a little coconut extract to the base but it’s completely optional. If you don’t have it, simply skip it.

So if you are craving the tender coconut ice cream, I hope you give this recipe a try. You will be amazed at how easy it really is to make it at home.

Method

1- To a blender, add 1 cup of chopped tender coconut meat, coconut milk and tender coconut water.

2- Blend to a smooth paste.

3- Place your mixing bowl and beater in the refrigerator for 20 minutes before you beat the cream. To a large bowl, add cold heavy cream.

4- Using your hand mixer or wire whisk attachment of your stand mixer, beat cream until it forms firm peaks. Be careful not to over-beat.

5- Add the prepared coconut paste to the whipped cream. Fold with gentle strokes, in one direction.

6- Stir in the condensed milk and mix until combined. I used the entire 14 oz can of condensed milk for this recipe. If you want it less sweet, reserve around 1/4 cup. Again, fold in gently and not vigorously.

7- Lastly add the remaining 1/2 cup of the chopped coconut to the ice cream base and fold gently.

8- Pour ice cream into freezer safe container and freeze the ice cream until set, around 6 to 8 hours.

Homemade Tender Coconut Ice Cream which tastes exactly like the ice cream from Natural! Make this creamy ice cream at home without an ice cream maker! 

Ingredients 

  • 1.5 cups chopped tender coconut meat divided
  • 1/2 cup coconut milk
  • 3/4 cup tender coconut water
  • 1 cup heavy whipping cream
  • 14 oz can condensed milk
  • 1/8 teaspoon coconut extract optional

  1. Hi I tried this recipe tastes amazing but after keeping 8/9 hrs in freezer , it didnt freeze. What can be the reason?

    1. I am really not sure, there’s nothing in the recipe that will prevent it from not freezing? Maybe just needs more time in your freezer

  2. I tried this ice-cream during lockdown and it was just amazing! My all the family members loved it…!
    But all the coconut pieces that I had put in the end settled at the bottom and we didn’t got that in the top scoops. I had also covered my container with a lid so there were no ice crystals formed. Overall it was a great experience making it and also eating it!!

  3. Can I use canned coconut meat? I live in canada and can’t get fresh tender coconut meat. We can get tender coconut water with meat in cans

  4. My son is vegan coconut cream instead of whipping créam same amount? Insted of condensed milk can i use sugar.

    1. you can try but amul cream has less fat (around 20%)..for this ice cream you need a cream that has more than 35% fat…not sure if it will work the same way

Hi Santosh, when you freeze it, try to put a layer of cling sheet or parchment paper on top of the ice cream. also once it’s semi set, try to pulse it in a food processor/blender and then freezer again..do this 2-3 times and then freeze overnight..this might help in getting rid of crystals..

    1. As a vegan I use coconut cream, which can be whipped into stiff peaks. Also if you boil coconut milk for 45 minutes, it turns into a kind of condensed milk. And yeah coconut milk or oat milk maybe for the milk part.
