I like both but it just depends on the day and occasion. If it’s a birthday, I would go all out and make a layer cake with lots of frosting.
But if I want to make a cake to have it with my coffee and chai, then just a simple cake would do. In fact I love simple cakes with my coffee, so much more than the frosted ones.
This Easy Strawberry Cake is so simple and so easy and yet tastes amazing. It just needed a dusting of powdered sugar and it was good to go. Don’t you guys love the ease of making such cakes?
The berry season is here and market is full of all sorts of berries. I always end up buying way more berries than I could possible consume. And also berries get spoiled pretty quickly. I try to keep them dry and do take all sorts of precautions but before you know it they are too ripe, almost rotten.
Do you guys have a solution for this? I know I can freeze them but are there any other options?
Anyway the other day I had too many strawberries lying around and so I made this cake for our evening coffee. This easy strawberry cake uses basic pantry essentials and is a breeze to put together.
The cake has some chopped strawberries mixed into the batter and few strawberry halves on the top. It is not very sweet and that’s why I liked it so much with my coffee. It’s the perfect pairing!
I could have made a quick frosting or strawberry syrup to drizzle on top but sometimes simple is better and this easy strawberry cake is the perfect example!
This Easy Strawberry Cake

I topped this cake with some turbinado sugar before putting in the oven. It added such a nice texture and flavor to the cake.
You may skip this step but I highly recommend it. If you don’t have turbinado sugar, you may use brown sugar in place.
So if you are looking for a simple and easy strawberry cake recipe or simple looking for a way to use strawberries in your refrigerator – make this cake! I am pretty sure that you won’t regret it!
Method – How to Make Easy Strawberry Cake
1- In a bowl whisk together all purpose flour, baking powder and salt. Set it aside.
2- Using your stand or hand mixer, beat egg with sugar at high speed for around 4 minutes, until the mixture becomes very light in color.
3- Add in the vanilla extract, oil, yogurt and mix until combined.
4- Start adding the flour mix. Add it in 2 parts, mixing after each addition.
5-Â Mix until the flour is just combined and do not over-mix.
6- Fold in the 3/4 cup chopped strawberries (5 oz) into the batter.
7- Transfer batter to a prepared 8-inch round cake pan. Top with the remaining 5 oz strawberry halves. Press the halves slightly so that they are dipped into the batter.
8- Sprinkle turbinado sugar on top. Bake the cake at 350 F degrees for around 45 minutes or until a toothpick inserted in the center comes out clean.
Take the cake out of the oven and transfer it onto a wire rack to cool completely.
Dust this easy strawberry cake with powdered sugar and enjoy a slice with chai or coffee!

Ingredients
- 1.5 cups all purpose flour 195 grams
- 1.5 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large egg at room temperature
- 3/4 cup granulated white sugar 150 grams
- 3/4 teaspoon vanilla extract
- 1/4 cup oil I used canola, may use olive or vegetable oil
- 3/4 cup whole milk plain yogurt
- 3/4 cup chopped strawberries 5 oz
- 5 oz strawberries cut into halves
- 1.5 tablespoons turbinado sugar
- powdered sugar for serving
Instructions
- Pre-heat oven to 350 F degrees. Spray a 8 inch round pan with non-stick spray and set it aside.
